Some have been asking about this simple recipe, so I thought I would throw it up here.
Enough walnuts (or your favorite nut) to cover the bottom of the skillet.
Enough butter to cover the nuts when heated
On your stovetop, heat butter in a cast iron skillet. Place nuts in the skillet and toss in the butter. Let heat. Once you start to smell the nuts cooking, add chocolate chips and marshmallows. Move to oven under the broiler for 40 seconds or until marshmallows are golden brown.
Years ago, when I was dieting, a good friend gave me this recipe for “diet cookies”. These are so good that they’ve become a permanent part of my repertoire, whether I’m dieting or not. For one thing, they’re sinfully delicious, and for another, they’re a snap to make.
1 box spice cake mix
1 (15 oz) can pumpkin
1 cup semi-sweet chocolate chips
Using a spoon, mix together the cake mix and the canned pumpkin. It will be very thick. Add the chocolate chips and mix well. Measure two tablespoons of batter for each cookie. Bake the cookies at 350 for 10-15 minutes or until cookies spring to the touch. This recipe makes 24 cookies. If you aren’t dieting, still give these cookies a go. They’re packed with flavor!
