Buffalo Chicken Remix

I shared Buffalo chicken sandwiches a couple of weeks ago, and while it’s great on a bun with macaroni salad, that recipe makes a lot of chicken. While I’ve been blessed with the unpickiest of husbands, who would eat buffalo chicken sandwiches uncomplainingly for every meal, I can’t do that. So I did some tweaking, and some testing, and some tasting. This recipe is a different way to use up the three pounds of chicken that the previous recipe makes.

You need:

2 avocados, sliced
1 cup cilantro, chopped
1/2 cup chopped green onions
Shredded lettuce
Ranch dressing
Low carb, high fiber tortillas
1 recipe buffalo chicken

Put three ounces of chicken down the center of tortilla. Top to taste with onion, cilantro, and shredded lettuce. Place two slices of avocado on top and add dressing to taste. (I added one tablespoon of light ranch to mine for one point. It was plenty.) Eat up! Prepared this way, one serving would have seven points plus.
