This is such an easy recipe to throw together, and it’s quite healthy too. Don’t let that fool you though. These burritos are quite tasty!
26 oz canned refried beans
1 (8 oz) block cream cheese, softened
1 (28 oz) jar chunky salsa
1 cup shredded cheddar cheese
Mix beans, cream cheese, and one cup salsa in a bowl. Scoop 3/4 cup into each tortilla and spread down the center. Fold over and place seam side down in a greased 9″x13″ pan. Pour the rest of the salsa evenly over the top. Bake at 350 for fifteen minutes. Sprinkle cheese evenly over burritos and place back in oven for five minutes, or until cheese is melted.
*if you’re doing weight watchers, use fat free refried beans, fat free cream cheese, high fiber tortillas, and 2% cheddar cheese. These, prepared this way, were six points apiece.
