Banana Nut Muffins

This is one of my favorite muffin recipes. Because I have to leave for work fairly early in the morning, I mix this batter up in the evening and refrigerate overnight. The next morning, I put the batter in the muffin pan and allow them to bake while I get ready. Everyone gets soft, fresh, warm muffins for breakfast, and we still get out of the door in plenty of time!

You need:

2 cups flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon baking powder
2 teaspoons ground cinnamon
1/4 teaspoon salt
1 cup mashed ripe bananas (about 3)
1/2 cup vegetable oil
2 eggs
2 tablespoons milk
1 cup roughly chopped pecans

In a large mixing bowl, combine all the dry ingredients. In a smaller bowl, mash the bananas and add the oil, eggs, and milk. Pour into the dry ingredients and mix well. The batter will be lumpy. Add the pecans and mix until just combined. Spray a muffin pan with non-stick spray. Fill cups to the top and sprinkle with additional pecans. Bake at 400 degrees for 15 minutes or until golden.
