This is a recipe that I grew up with. It is now one of my husband’s favorites, as well as my four year old son’s! In fact, my hubby requested it for his birthday supper. It’s very satisfying in a creamy, crunchy kind of way! Enjoy!
5 baked chicken breasts, cubed
1 can condensed cream of chicken soup
12 ounces sour cream
4 tablespoons poppy seeds
2 sleeves Ritz crackers
1 stick melted butter
In a large bowl, mix the chicken with the sour cream, soup, and poppy seeds. Spread in a casserole dish sprayed with cooking spray. In a large Ziploc baggie, crush crackers until very small. Pour melted butter into bag and zip it shut. Manipulate the baggie with your hands until the butter evenly coats the cracker crumbs. Sprinkle evenly over the chicken mixture. Bake at 350 for 30-45 minutes or until edges are bubbly and crackers are golden brown.
