Tortilla Soup is one of my favorite cold, rainy day recipes. It is low in calories and I generally have everything on hand to make it. Give it a try and let us know what you think! 🙂 Enjoy!
3 boneless skinless chicken breast halves
½ cup chopped onion
1 garlic clove
¼ teaspoon chili powder
3 cans chicken broth
¼ teaspoon ground cumin
2 cans diced tomatoes with green chilis (Rotel), undrained
Shredded reduced-fat cheddar cheese
4 thick lime slices
1. Chop onion. Cut chicken into 1/2 inch pieces. Cook chicken in pot sprayed with vegetable oil, add onion, garlic, chili powder and cumin. Cook and stir. Stir in broth, tomatoes and chilis. Bring to a boil. Reduce heat and simmer.
2. Snip cilantro. Add 6-8 tortilla chips to bowl. Ladle soup over tortillas (Be sure not to pour the soup in until everything is ready to eat since the chips will get soggy quickly.) Grate cheese over top. Sprinkle with cilantro. Garnish each bowl with lime slice to squeeze juice into soup if desired.
Note: I almost always use leftover turkey for this recipe and it is delicious no matter how dry the turkey may be. 🙂
