I love a piping hot bowl of chili on a cold, raw day like today. Here is my favorite chili recipe, given to me by a very dear family friend.
2 pounds ground beef
One large red onion, diced
2 (15 oz) cans kidney beans
2 (15 oz) cans diced tomatoes with onion, peppers, and celery
64 ounces tomato juice
1 package French’s Chili-O mix
Salt and pepper to taste
In a skillet, cook ground beef with diced onion until the beef is browned and the onion is soft. Drain most of the fat but not all. Set aside. Drain and rinse the beans. In a large soup pot, combine the beans and tomatoes with the tomato juice. Allow to get very hot. Add the ground beef mixture. When the meat is
mixed in thoroughly, add the chili-o mix. Stir very well. Add salt and pepper to taste. Turn down heat, and allow to simmer for 30-45 minutes. Serve with shredded cheddar cheese and sour cream.
