One of the most comforting meals on a blustery day is a big, steamy bowl of potato soup. This recipe is as easy as it is creamy and delicious!
6-8 red potatoes, coarsely chopped
One large sweet onion, julienned
Five cups of milk
One cup of water
Two cans of cream of potato soup
Combine the milk, water, and canned soup in a large pot. Bring to a boil, stirring occasionally. Add potatoes and onion, and return to a boil. Simmer at medium heat for twenty minutes, or until potatoes are tender. Salt and pepper to taste. Serve with shredded cheddar cheese and toasted French bread.
