I love to grill! I think this is partly because it is something that my father handed down to me. My brother and I used to, and still do when we are together, hang out around the grill while dad was cooking. One of our favorites growing up was Dad’s Cheesy Chicken. It is a guaranteed crowd-pleaser, and it costs almost nothing to make.
You will need:
4 Boneless, Skinless Chicken Breasts
4 tbs of Dale’s Seasoning
8 slices Swiss Cheese
Remove chicken from refrigerator thirty minutes before you are ready to grill. Wash the chicken and pat very dry with paper towels. Brush liberally with Dale’s Seasoning ten minutes before you put chicken on the grill. Make sure that your grill is very hot. (400 to 500 degrees) Place seasoned chicken on the grill and LEAVE IT ALONE for five minutes. Do not peek or open the lid for any reason. IF YOU’RE LOOKIN, YOU’RE NOT COOKIN! After five minutes, flip the chicken and close the lid. Do this as quickly as possible to reduce the loss of heat. Let chicken cook for four minutes, then place two crisscrossed pieces of Swiss cheese to fully cover chicken. Cheese will melt in 30 – 60 seconds. Remove from grill onto platter and cover with aluminum foil being careful not to let the foil stick to the cheese. Let the chicken rest for five to ten minutes. Serve and enjoy!
