Coconut Cake

There are times when you need a special dessert, whether it be for a church potluck, a family get-together, or having people over for dinner.  But special desserts can be time consuming, difficult, and expensive.  This coconut cake recipe is one of the easiest you’ll make–and everyone will be impressed!

You need:
1 white cake box mix
1 (12) oz can sweetened condensed milk
1 (15) oz can cream of coconut  (you’ll find this in the mixed drink department of you grocery store–no worries, it’s non-alcoholic!)
1  (8) oz container Cool Whip
1  (7) oz bag of sweetened flake coconut

Bake the cake following the instructions on the back of the box in a 9″x13″ pan.  Letting it cool just a little bit, whisk together the sweetened condensed milk and the cream of coconut.  While the cake is still warm, punch many holes in it with the handle of a wooden mixing spoon.  Pour the milk/cream of coconut mixture all over the cake evenly.  Allow to set overnight in the refrigerator.  Not long before serving, mix the cool whip and the bag of coconut together in a large mixing bowl.  Spread over the surface of the cake.  It’s ready to serve!  Refrigerate any leftovers.
