Mexican Casserole

Every family has favorite meals that are passed along from one person to the next.  It’s really nice when they’re as easy as this one!

You need:

1 package 9″ flour tortillas
2 lbs ground beef
1 sweet onion
2 cans cream of chicken soup
2 cans ranch style beans (1 can drained)
1 can Rotel
sliced American cheese

Brown the ground beef in a skillet with the onion, draining when through.  Mix the meat with the 2 cans of cream of chicken soup.  Spray a 9″x13″ baking dish with cooking spray. Place a layer of tortillas in the bottom of the dish, overlapping as needed. Put half of the meat/soup mixture on top of the tortillas, then layer with one can of beans. Start layering process over again, but after the second can of beans, add the can of Rotel, and cover with the sliced American cheese.  Bake at 350 degrees for 45 minutes, or until cheese is browned at the edges and bubbly.  This is great with corn.  I also like to serve mine with taco sauce.
